Ingredient ! 175 g olive oil. 3 eggs. 150 g yogurt (preferably Greek yogurt). grated zest from 2 oranges. 225 g self rising. 175 g granulated sugar. 1 teaspoon vanilla extract (2 packets vanilla powder).
Preparation ! Preheat oven to 180 Celsius (350 Fahrenheit ) Fan. In a large bowl, add the olive oil, eggs, yogurt and orange zest.
Beat with a hand whisk until all of the ingredients are combined and the yogurt is completely incorporated in the mixture. You can also do this in a mixer but its not necessary. Add all of the remaining ingredients and mix with a spatula until you have a smooth and well combined mixture.
Grease and flour a 10×25 cm rectangular cake or loaf pan. Pour in cake batter.
Bake for 50 minutes.
