Ingredient! 2 medium eggs 16 ounces fat-free cream cheese. 75gram ( two by three cup) caster (raw) sugar. 1 teaspoon vanilla essence . 6 tablespoon coffee flavoured liqueur. 200 milli liter (7 fluid ounce) strong black coffee. 24 lady fingers. 1 level tbsp cocoa powder.
Preparation! Separate the eggs. Place the cream cheese in a bowl with the egg yolks, caster sugar and vanilla essence. Whip until smooth. Whisk the egg whites and fold into the mixture. Spoon a third of the mixture into the base of a 900 milli liter 2 pint
rectangular dish. Mix together the liqueur and coffee. Dip half the sponge fingers into the liquid and place in the dish. Spread another third of the mixture over the sponge fingers and then dip the remaining biscuits and lay over the creamy mixture. Finish with a layer of creamy mixture and dust with the cocoa powder.
Chill the dish overnight before serving.
