Ingrediens!
2 cups chickpeas
1.7 liters of water
½ level tablespoon salt
Cooked fries
2 tablespoons water for dilution
½ tablespoon salt)
1 large sprig of mint, minced finch
2 pink red pepper
4 tablespoons white wine vinegar
Preparation!
Put the chickpeas in the water for several hours or overnight.
Put the chickpeas with their emollient liquid in a bowl and add salt.
Boil, foam of any foam that may form.
Cook for 10 minutes, then lower the heat, cover the pan and simmer slowly on a low heat until the chickpeas are soft but still retain their shape and the liquid is reduced leaving a thickened juice at the bottom of the pan
Let the chickpeas cool in their juice
When cooled, stir well to coat all chickpeas with the thickened juice
Mix all the dressing ingredients together (vinegar, water, salt, mint and red pepper).
Then sprinkle the dressing liberally over the chickpeas, mix it gently and sprinkle with more salt to taste.
Serve it with boiled potatoes.
