Ingredient!
Salad
8 cups salad greens I used butter salad
2 cups of pineapple cut into small cubes
2 cups of mandarin orange segments packed in water
1/2 cup of dried cranberries
1/2 cup coriander chopped
1 bunch of green onions cut
4 teaspoons of Chia seeds
4 teaspoons of sesame seeds
2 cups of black bean chicken, shrimp or your favorite protein
Honey Lime Dressing
1/4 cup of honey or agave nectar
1/4 cup apple cider vinegar
1/8 cup lime juice
1/2 cup rapeseed oil
2 tablespoons of finely diced onion
Pinch of salt
Preparation!
Make salad greens, pineapple, mandarin orange slices, cranberries, coriander and green onions between 4 plates or in a large bowl.
To make honey lime dressing, add all the ingredients to a food processor and pulse until smooth.
Drizzle dressing over salad.
Sprinkle Chia seeds and sesame seeds over the top.
Top with black beans or desired protein.
