Ingredient!
Canned tomatoes 29 ounces (1 can, 2 1/2 sizes)
Chopped Celery and Leaves 1 Cup (16 tablespoons)
Onion 2, chopped
Butter 3 tablespoons
Rice or Orzo or egg noodles 3/4 Cup (12 tablespoons)
Beef 2 pounds (Adjust quantity as needed)
Salt to taste
Pepper to taste.
Preparation!
Cover beef with water and cook.
Add can of tomatoes.
Saute chopped vegetables in butter for 10 minutes.
Add to the bones and cook.
Cook for 2 hours or until meat is tender.
Pull and press vegetables through a sieve.
Add rice, orzo or noodles and cook until tender.
If beef is to be used, remove meat from bones when tender, cut into small pieces and add to soup.
