Brazilian style beef ribs

Ingredient
1 (3 pounds) whole beef ribs (no short ribs)
2 tablespoons sea salt, or more if necessary
3/4 cup of water
Preparation!
Preheat the oven to 275 degrees.
Place the grill of beef ribs in front of you on a work surface with the shiny white membrane facing up. Slide the blade of a sharp knife under the membrane at one end, and cut the membrane of the meat in one piece, if possible. Discard the rubbery membrane. Rub the ribs well with sea salt, front and back. Place ribs on a rack in a roasting pan.
Bake in preheated oven until very tender, about 6 hours. Lightly brush the beef with water (use beef broth if you prefer) after the first 1 1/2 hours, being careful not to dislodge the salt. Brush again every 45 minutes to 1 hour; After 6 hours of cooking, remove from the oven and let stand for 10 to 15 minutes before cutting into portions.
