Caribbean vegetable curry

Recipe Code: 675

Ingredient
2 teaspoons of oil
3/4 cup onions
6 sprigs of thyme
2 pounds of beef stew
1/2 cup yellow split peas
salt to taste
black pepper to taste
1 pound white sweet potatoes
1 pound plantains
6 to 8 okra
2 carrots
1/4 cup green onions
1 recipe dumplings
Preparation!
Heat the oil in the pressure cooker or in a pot
Add onions and sauté until translucent, about 2 to 3 minutes.
Add 3 sprigs of thyme and sauté for 1 minute
Add the beef and sauté with onions and thyme for 3 minutes. Add the split peas with salt and pepper to taste.
Add 5 cups of water, stir, scrape the pieces stuck to the bottom of the pot. Close the pressure cooker and leave the pressure on for 20 to 22 minutes. The timing starts from the first whistle. If using a pot and an extra cup of water, bring to a boil, cover and simmer for 30 to 35 minutes.
Open the pressure cooker and add the sweet potatoes, plantains, carrots and remaining thyme and enough water to cook the ingredients and make the soup. Cook over high heat for 12 to 15 minutes. Do not block the pressure cooker, just let the lid sit on top of the pot.
Add the raw pie crust with the okra to the lid and cook for 6 to 8 minutes or until the meatball is cooked through.
Taste the soup for seasoning and adjust accordingly. Stir in green onions and serve.
