Chef John’s Brazilian Feijoada

Ingredient!
1 pound dried black beans
2 liters of water
3 ounces of dried beef,
1 bay leaf
2 smoked pork chops
4 ounces bacon, coarsely chopped
12 ounce linguica sausage
2 Italian sausage links
1 onion,
1 C. 1 tsp ground cumin
1/2 teaspoon ground coriander
1 pinch of cayenne pepper, or to taste
salt and ground black pepper to taste
1 tablespoon parsley
1 tablespoon olive oil
1/2 cup dry bread crumbs
2 tablespoons Italian parsley
2 teaspoons grated orange zest
preparation!
Place the drained beans in a large container with 2 quarts of water. Bring to a boil over medium-high heat.
Add the ground beef to the pan with the beans. Add the bay leaf and pork chop bones, stir and simmer over low heat for another 2 hours.
Cook the bacon in a large dry skillet over medium heat until it is not very crisp. Slice the Italian sausage into pieces.
Add the onion and spice mixture to a saucepan with the beans. Reduce heat to medium-low and cook uncovered until beans are very tender and liquid begins to thicken, about 1 hour, stirring occasionally.
Heat the olive oil in a pan.
