Ingredients!
5 1/4 ounces of rice noodles
1 vegetable bouillon cube
4 tablespoons soy sauce
2 tablespoons lime juice
1 inch fresh ginger (peeled, grated)
1 stalk of lemongrass (halved in length)
1 red chili peppers (sown, sliced)
10 1/2 ounces of roots (peeled, cut into very thin slices)
2 green onions (thinly sliced diagonally into thin slices)
10 1/2 ounces of mixed mushrooms
1/2 bunch of fresh coriander
Preparation!
Fry noodles in boiling salted water according to the instructions on the package.
2 Meanwhile, bring 4 cups of water to the boil. Add stock cube and stir to dissolve. Add soy sauce, lime juice, ginger, lemongrass and chili. Add carrots, green onions and mushrooms. Bring to the boil again and let it simmer for about 5 minutes. Drain noodles and add to the soup. Serve sprinkled with coriander leaves.
