Ingredient!
1/2 pound of new potatoes, divided into four
1/4 cup chopped fresh parsley
1/4 cup pitted nicoise olives
1/2 onion, cut into thin slices
1 (5 ounce) can be tuna
1/3 pounds of fresh green beans – rinsed, trimmed and blanched
1/2 pound of mixed salad greens
1 cup of lemon vinaigrette
3 hard-boiled eggs, divided into four
3 roma (plum) tomatoes, cut into thin slices
1 tablespoons capers
4 anchovy fillets
Preparation!
Bring a large pan of salted water to the boil. Add potatoes and cook until soft, but still firm, about 15 minutes. Drain and cool.
Mix the potatoes, parsley, olives, onion, tuna and green beans in a large bowl. Cool for 2 to 4 hours.
In a large bowl, throw greens with vinaigrette and top with chilled potato mixture. Garnish with eggs, tomatoes, capers and anchovies.
