Ingredient!
1 tablespoon olive oil
1/2 large onion
3 cloves of garlic
2 ribs of celery
2 carrots, slices
2 cups of mixed chopped vegetables, your choice
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 teaspoon thyme
1 tsp oregano
1 leaf blade
8 cups of water and 2 cubes of vegetable broth OR 8 cups of vegetable broth
1 14 ounce can tomatoes
Preparation!
Heat oil in a large soup or stock pot. Add chopped onion, chopped garlic, carrots and celery. Heat, stirring for 3-4 minutes, until the onions are soft. Add the rest of the vegetables and heat for just a few minutes.
Add salt, garlic powder, thyme and oregano, stirring to coat the vegetables well.
Add onion leaves, water or vegetable broth and bring to a simmer. If using broth cubes, add and stir to ensure that they dissolve.
Add the tomatoes, stir and simmer until the vegetables are cooked, approx. 8-12 minutes.
Adjust seasoning to taste.
Remove the leafy leaves and serve your homemade vegetable soup with a splash of parmesan cheese if you don’t eat vegan and some crunchy bread or biscuits.
