Ingredient!
12ounces boneless shiny chicken breast
4eggs
4dried shiitake mushrooms
1onion
SIMMERING SAUCE
1 / 2cup water
4 tablespoons of soy sauce
3tablespoons mirin
1tablespoon sugar
5cups of cooked rice
coriander, for garnish (optional)
Preparation!
Cut the chicken breast into thin slices.
Soak dried shiitake mushrooms in lukewarm water until soft.
Cut hard stems and cut into halves.
Cut onions into thin slices.
Chop cilantro.
In a large skillet with lid, mix all the ingredients in the starving sauce and cook them.
Add chicken, mushrooms and onions and cook over medium heat for 3 to 4 minutes, or until chicken is done and onions are tender.
Beat eggs in a small bowl, then pour over the chicken and cover with a lid.
Cook until egg is set, approx. 1 minute at low heat.
Sprinkle cilantro on top.
