Ingredient ! Canned tomatoes 29 Ounce (1 Can, 2 half Size). Chopped celery and leaves 1 Cup (16 tablespoon). Onions 2 , chopped.
Butter 3 Tablespoon. Rice or Orzo or egg noodles three by four Cup (12 tablespoon). Beef bones 2 Pound (Adjust Quantity As Needed). Salt To Taste. Pepper To Taste.
Preparation ! Cover beef bones with water and bring to a boil. Add can tomatoes. Saute chopped vegetables in butter for 10 minutes. Add to bones and bring to a boil. Simmer for 2 hours, or until meat is tender. Strain and press vegetables through a sieve. Add rice, orzo, or noodles and cook until tender. If beef shank is used, remove meat from bones when tender, cut in small pieces, and add to soup.
