Ingredient !
4 cups finely grated carrots. half cup almonds, blanched and sliced. half cup raisins, soaked in water or orange juice. 1 cup spring onions, finely sliced. half cup olive oil. half cup vinegar. half cup sugar syrup. Salt and pepper to taste. 1 teaspoon mustard powder. 1 heaped tablespoon chopped garlic. 4 tablespoon chopped onion. 1 cup black grapes. 2 tablespoon chopped garlic. 2 tablespoon onion. 2 tablespoon red wine vinegar. 4 tablespoon olive oil. Salt and pepper to taste. 2 tablespoon honey. 2-3 green chilies
Preparation !
Mix all the ingredients for the salad in a bowl and keep aside. Put all the ingredients in a blender except the olive oil, and start blending. While blending, slowly add the olive oil to emulsify the mixture. Mix the dressing with the carrot salad. Put all the ingredients for the dressing in a blender and blend till smooth. Check seasoning and adjust accordingly. Top the salad with this dressing and serve at room temperature.
