8 cups green salad I used butter lettuce
2 cups pineapple cut into small cubes
2 cups of tangerine segments wrapped in water
1/2 cup dried cranberries
1/2 cup chopped cilantro
1 bunch sliced green onions
4 teaspoons of chia seeds
4 teaspoons sesame seeds
2 cups black beans chicken, shrimp or your favorite protein
Honey and lime dressing
1/4 cup honey or agave nectar
1/4 cup apple cider vinegar
1/8 cup lime juice
1/2 cup canola oil
2 tablespoons finely diced onion
Pinch of salt
Preparation!
Layer the green salads, pineapple, mandarin quarters, cranberries, coriander and green onion between 4 plates or in a large bowl.
To prepare the honey-lime vinaigrette, add all the ingredients in a food processor and mix until smooth.
Drizzle with salad dressing.
Sprinkle the chia seeds and sesame seeds on top.
Garnish with black beans or desired protein.
