Chinese mushroom soup

Ingredients!
5 1/4 ounces of rice noodles
1 cube of vegetable broth
4 tablespoons soy sauce
2 tablespoons lime juice
1 inch fresh ginger (peeled, grated)
1 lemongrass stem (cut in half lengthwise)
1 red pepper (seeded, sliced)
10 1/2 ounces of carrots (peeled, cut into very thin slices)
2 green onions (thinly sliced ​​diagonally)
10 1/2 ounces of mixed mushrooms
1/2 bunch of fresh coriander
Preparation!
Cook the noodles in boiling salted water following the directions on the package.
2 Meanwhile, bring 4 cups of water to a boil. Add the bouillon cube and stir to dissolve. Add soy sauce, lime juice, ginger, lemongrass and chilli. Add carrots, green onions and mushrooms. Bring back to the boil then simmer for about 5 minutes. Drain the noodles and add to the soup. Serve sprinkled with coriander leaves.
