Ingredient!
1 cup of chestnuts
2/3 cup butter
1/4 cup orange juice
1/4 cup mandarin juice
2/3 cup lemon juice
1 whole turkey
salt and ground black pepper to taste
1/2 pound minced meat
1/2 pound of ground pork
1/4 cup chopped onion
1/2 cup uncooked instant rice
1/4 cup pine nuts
1/3 cup butter
1/2 cup chicken broth
2 tablespoons cognac
1 teaspoon of salt
1/2 teaspoon ground black pepper
Preparation!
Preheat the oven to 325 degrees Fahrenheit
Make a small incision on the sides of each chestnut, and place them in a frying pan over medium heat. Cook, often stirring, until roasted. Removal of heat, peel and heels.
Melt 2/3 cup butter in a pan and mix the orange juice, mandarin juice and lemon juice. Rub the turkey inside and outside with the mixture, and save some stringing.
In a large frying pan over medium heat, cook the minced meat, ground pork and onion until beef and pork are evenly browned and onion is soft.
Stir in the chestnuts, pine nuts, raisins, 1/3 cup butter, broth and brandy.
Season with 1 teaspoon of salt and 1/2 teaspoon of pepper.
Place the turkey on a rack in a roasting tin and cover the breast and thighs loosely with aluminum foil.
Pour about 1/4 inch of water into the bottom of the pan. Keep this level of water during the cooking time. Roast turkey in the preheated oven for 3 to 4 hours,
Increase the oven temperature during the last hour of roasting and remove the foil. Cook turkey to a minimum internal temperature.
