Ingredient!
2 tablespoons oil
2 teaspoons minced garlic (lehsun)
2 teaspoons chopped onion
1/2 tsp baharat
salt to taste
1/2 teaspoon freshly ground black peppercorn (kalimirch)
1/4 cup chopped tomatoes
4 cups vegetable stock
1/4 cup sliced zucchini
1/4 cup peeled and sliced carrots
2 teaspoons chopped celery
3 tablespoons parsley
Preparation!
Heat the oil in a saucepan, add the garlic and onion and saute until the onions become translucent.
Add baharat, salt, black pepper and tomatoes and saute for another 2 minutes.
Add the vegetable stock and cook it.
Lower the flame and add the zucchini, carrots and celery.
Cover the pan with a lid and simmer for approx. 20 minutes or until the vegetables are cooked.
Add parsley and mix well.
Serve hot with pita bread.
