Ingredient !
Three can grated carrots
Two limes, juiced
One to two tomatoes, diced
one Tablespoon. onion, finely diced
One handful fresh cilantro, diced
Half teaspoon. salt
Tarka
One Tablespoon. clarified butter ghee
One Tablespoon. mustard seeds
one Tablespoon. asafoetida hing
Half Tablespoon. hot green chili, diced
Preparation !
Grate the carrots, and toss with remaining Salad ingredients.
In a small pan, melt clarified butter and add mustard seeds, asafoetida, and chili.  Heat over medium heat until the mustard seeds pop.  Pour the Tarka over the carrots and serve.
