1 pound chicken breasts. 2 tablespoons dry rub. 1 tablespoon olive oil. 1 tablespoon chopped parsley . 1 cup bell pepper. 3 cups mixed salad greens. 4 bamboo shoots
Preparation !
Soak skewers in water. Wash chicken under cold water. Pad dry with kitchen towel and cut into 1 inch cubes. Combine rub, parsley and olive oil with chicken, mix well and let marinade for about 45 mins. When ready, preheat stove top grill (medium – high) . Thread 4 chicken pieces per skewer. Drizzle some olive oil over grill. Cook chicken on each side for about 5-6 minutes until done. Combine mixed greens and peppers in a large bowl and toss with Serano honey vinaigrette Tranfer to serving bowls and top with chicken skewers.
