Caribbean vegetable curry

Ingredient!
2 teaspoons of oil
3/4 cup onion
6 sprigs of thyme
2 pounds of beef
1/2 cup yellow split peas
salt to taste
black pepper to taste
1 pound white sweet potatoes
1 pound of plantains
6 to 8 okra
2 carrots
1/4 cup green onions
1 recipe dumplings
Preparation!
Heat the oil in the pressure cooker or pan
Add onion and sauté until translucent, approx. 2 – 3 minutes.
Add 3 spread thyme and saute for 1 minute
Add beef and saute along with onion and thyme for 3 minutes. Add split peas along with salt and pepper to taste.
Add 5 cups of water, stir, scrape up any bits stuck to the bottom of the pot. Close the pressure vessel and allow to press for 20 – 22 minutes. Timing begins from the first whistle. If using a saucepan and an extra cup of water, cook, cover and simmer for 30 – 35 minutes.
Open pressure cooker and add sweet potatoes, plantains, carrots and remaining thyme and enough water to make the ingredients and make the soup. Cook on high heat for 12-15 minutes. Do not lock the pressure vessel, leave only the cover on top of the pot.
Add raw dumpling dough along with okra to pan cover and cook for 6 – 8 minutes or until dumpling is cooked through.
Taste soup for seasoning and then adjust. Stir in green onions and serve.
