Brazilian Feijoada from chef John

Ingredient!
1 pound of dry black beans
2 liters of water
3 ounces of dried beef, minced meat
1 bay leaf
2 smoked pork chops
4 grams of bacon, coarsely chopped
12 grams of linguica sausage
2 links Italian sausage
1 onion, minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1 pinch of cayenne pepper, or to taste
salt and ground black pepper to taste
1 tablespoon chopped Italian parsley
1 tablespoon olive oil
1/2 cup dry breadcrumbs
2 tablespoons chopped Italian parsley
2 teaspoons grated orange peel
preparation!
Place black beans in a large bowl, cover with water and soak overnight. Drain beans.
Put the drained beans in a heavy pan with 2 liters of water. Bring to the boil over medium heat.
Stir the chopped dried beef into the bean pot. Add bay leaves and minced pork, stir and simmer for 2 hours over low heat.
Fry the bacon in a large dry frying pan over medium heat until it is not completely crispy. Cut Italian sausage into pieces.
Stir the onion-spice mixture into the bean pot. Reduce the heat to medium low and cook uncovered until the beans are very soft and the liquid begins to thicken, about 1 hour, stirring occasionally.
Heat the olive oil in a frying pan. Add breadcrumbs and cook and stir until the crumbs are toasted. Add 2 tablespoons of Italian parsley and grated orange zest.
When the beans are done, simmer them in bowls and drain with the roasted crumb mixture.
