Caribbean vegetable curry

Ingredient!
2 teaspoons of oil
3/4 cup onions
6 sprigs of thyme
2 pounds of beef stew
1/2 cup of yellow split peas
salt to taste
black pepper to taste
1 pound of white sweet potatoes
1 pound plantain
6 to 8 okra
2 carrots
1/4 cup of green onions
1 recipe dumplings
Preparation!
Heat the oil in the pressure cooker or pot
Add onions and fry until they are translucent, about 2 – 3 minutes.
Add 3 sprigs of thyme and bake for 1 minute
Add beef and fry together with the onions and thyme for 3 minutes. Add split peas, along with salt and pepper to taste.
Add 5 cups of water, stir, scrape all the pieces stuck to the bottom of the pot. Close the pressure cooker and allow to stand for 20 – 22 minutes. Timing starts from the first whistle. If you use a pot and an extra cup of water, bring to the boil, cover and simmer for 30 – 35 minutes.
Open pressure cooker and add sweet potatoes, pisangs, carrots and remaining thyme and enough water to prepare the ingredients and make soup. Let it cook on high heat for 12 – 15 minutes. Do not lock the pressure cooker, but let the lid rest on the top of the pot.
Add the raw dumplings with the okra to the pot holder and let it cook for 6 – 8 minutes or until the dumplings are cooked.
Taste soup for herbs and adjust accordingly. Stir in the green onions and serve.
