2 garlic seeds, chopped
2 teaspoons of olive oil
8 cups fresh spinach (about 10 ounces), chopped
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups hot cooked rice
1/2 cup chopped fried sweet red peppers
Preparation!
In a large nonstick frying pan, fry the garlic in oil for 1 minute. Stir in spinach. Cover and cook for 3-4 minutes or until tender tender well. Add vinegar, salt and pepper. Stir in rice and red pepper until combined. Cook and stir until heated through.
