Shour Nakhod (chickpeas with a mint sauce)

Ingredients!
2 cups chickpeas
1.7 liters of water
½ tablespoon of salt
Cooked fries
2 tablespoons water for dilution
½ tablespoon of salt)
1 large sprig of mint, finely chopped finel
2 pink red peppers
4 tablespoons white wine vinegar
Prepare it!
Place the chickpeas in the water for a few hours or overnight.
Put the chickpeas and their softening liquid in a bowl and add salt.
Boil foam that can form.
Cook for 10 minutes, then lower the heat, cover the forehead and let it simmer slowly over low heat until the chickpeas are soft but still retain their shape and the liquid is reduced and leaves a thickened juice on the bottom of the forehead
Let the chickpeas cool in their juice
When you have cooled down, stir gently to cover all the chickpeas with the thickened juice
Mix all dressing ingredients together (vinegar, water, salt, mint and red pepper).
Then rinse the dressing generously over the chickpeas, mix it carefully and sprinkle with some salt to taste.
Serve it with boiled potatoes.
